Hello divas! I hope that you have had a fabulous weekend and are ready for another fun filled week. I was actually home this weekend so it was relaxing. And I have been loving the fall-like weather that Tennessee has been having in the past few weeks.
When I think of fall, I think of the return of pumpkins, apples and crockpots are just around the corner. I cannot begin to tell you how much I love my crockpot this time of year. I use it for EVERYTHING.
So today I thought I would share another super easy healthy recipe involving my favorite flavor of the season, pumpkin, and my favorite kitchen appliance, my crockpot. This pumpkin oatmeal is cooked overnight in the crockpot, leaving you with a ready-to-eat delicious healthy breakfast the next morning.
I just love my crockpot this time of year. It make preparing meals so easy. Whether it’s overnight meals such as my crockpot breakfast casserole that are ready for breakfast the next morning or a delicious chili ( see my drunk deer chili or veggie quinoa chili recipes) or soup recipe that can cook all day for a healthy dinner after work, you really can’t beat having one in the kitchen.One think I love about this recipe is that it is so easy to make. You simply add all the ingredients into the crockpot right before bed, cover and cook on low overnight. When you wake in the morning, you have breakfast ready to go. It also makes a whole lot of oatmeal. I have a 6qt. crockpot and it is filled up! The leftover oatmeal (if there is any) can be refrigerated or frozen to take out and eat at a later date. It only takes a few minutes in the microwave to heat up.
