I am so excited for the start of the Christmas season. And one of my favorite parts of the season is all the yummy cookie recipes. Ya’ll know I love a good sweet and I love cookies.
Growing up, red velvet was always my favorite flavor (and it works so well with the Christmas season!) so today I am sharing a fantastic easy healthy recipe, my Easy Red Velvet Cool Whip Cookies.
Starting the day after Thanksgiving and continuing through the month of December everywhere I look, there are cookie recipes. There is just something fun and enticing about Christmas cookies. It doesn’t matter what kind, I am always one to enjoy a Christmas cookie – especially with I can make them lighter and bake with family members. As we all know, though, cookies are generally not so good for the diet. Sugar is just not something we need to have in our bodies (see 6 ways to stop sugar cravings). So I have made it my mission to find easier, healthier ways to enjoy my love for all things Christmas cookies.
This particular recipe is probably among the easiest cookie recipes I have ever baked. It literally has 3 ingredients (cake mix, cool whip, and 1 egg) with an optional 4th (powdered sugar – though that’s not the healthiest option). It is also lower in sugar and calories than most cookies out there.
There are also options to make these cookies lighter if necessary. The base ingredient is red velvet cake mix. There are different types of cake mixes out there – you just need to find the one that works for your diet (low sugar, gluten-free, ect). Also it calls for 1 egg, but you can use an egg substitute if you do not cook eggs. Lastly, it is up to you if you want to add that little dusting of powdered sugar or not to these cookies.
