Hello divas! I hope that you had a fabulous weekend. Mine was pretty low-key but extremely enjoyable. Though it has been feeling more like the middle of July here in Tennessee instead of mid-May. Needless to say, summer has arrived a bit early lol.
One of my favorite things ever about summer is ice cream. I mean I would eat a bowl every night if I could. But we all know that ice cream can be far from healthy. The sugar content alone is enough for this PCOS girl to try to avoid it as much as possible.
While it is a fantastic treat in the hot weather, that doesn’t mean it can’t be a bit healthy as well. So today I am sharing another easy healthy recipe – my Skinny Chunky Monkey Ice Cream recipe. And even better is that it is 21 Day Fix approved!
The 21 Day Fix eating plan has been amazing for me since I started a couple of years ago. I love how easy it is to balance my nutrients each day. It has also helped me understand WHAT I should be eating and HOW MUCH I should be eating of my carbs, veggies, proteins, fruits, etc. It is also customizable which is great since I have to keep my sugars and carbs on the lower end of the spectrum.
Because of this eating plan, I have been busy in the kitchen making all kinds of yummy dishes that are healthy, lean and fit with the program (see my skinny strawberry mocha frappuccino and healthy baked penne). I love my Shakeology smoothies that I drink everyday, but I knew there were so many other options out there to use the nutritional powder. Ya’ll know I love my desserts so I wanted to create a fun summer treat that is also good for you.
This ice cream recipe is super easy. Most of the time it takes is when it is freezing to make the ice cream itself. There are only 5 ingredients and it is as easy as putting them all in a blender, blending until smooth and freezing. Once done, you have a healthy snack or dessert that is loaded with essential protein and nutrients (thanks Shakeology!) and fits into any diet (including 21 day fix).
If you are keeping up with your 21 day fix containers, this recipe is 1 red, 1/2 yellow, 1 blue, 1 purple and 1 tsp.

Ingredients
- 2 scoops chocolate protein powder (I used Vegan Chocolate Shakeology)
- 2 frozen bananas
- 2 tbsp peanut butter powder
- 1 cup almond milk
- 1/4 cup walnuts, chopped
Directions
- Place all ingredients into blender .
- Blend until smooth.
- Place in glass bowl and freeze for 4 hours. Stir every 30-45 minutes while freezing.
- Place into serving dishes and enjoy!
