Hello divas! I hope that you had a wonderful week so far! Mine has been pretty good. The weather feels like fall which is extremely nice.
I just love the month of November. Not only do you get all the yummy fall and Thanksgiving flavors and recipes, but you start to see some holiday and winter ones as well. One of my favorites hands down is gingerbread. There is just something about it that takes me back to my childhood.
And with the start of the holiday season soon, I thought that today I would share an easy healthy recipe that is perfect for the holidays – my Skinny Gingerbread Muffins.
If you are a regular reader of this blog, you know that I love muffins (see my other healthy muffin recipes – Blueberry Avocado Muffins and Skinny Pumpkin Protein Muffins). They are such a versatile food and can be used not only as a fabulous breakfast but also as a snack or even a lighter dessert if so desired. So I wanted to create a holiday version of some of my favorite healthy muffin recipes that include gingerbread to create a delicious holiday breakfast recipe.
As we know, muffins are not always the healthiest option for breakfast. So I made a few substitutions to make this particular recipe lighter and healthier than a typical recipe. I used raw honey instead of molasses, vanilla greek yogurt instead of sour cream, vanilla almond milk instead of regular milk and whole wheat flour instead of white flour. The end result is a yummy, healthy Christmas treat.
