Hello divas! I hope that you had a fantastic weekend and are ready for what will hopefully be a fun-filled week ahead. Mine was pretty great. We got new living room furniture so I spent some time redecorating lol. I was also able to spend some time in the kitchen which means I have another yummy easy healthy recipe to share today.
If you are a reader of this blog, you know that I am a big fan of healthy muffin recipes. They are just so perfect for a quick, healthy breakfast recipe or on-the-go snack. You can also add ingredients that can boost the nutritional value to make them even healthier.
With spring just around the corner, I thought that this would be a good time to share a healthy strawberry recipe with ya’ll. So today I am sharing my healthy strawberry greek yogurt muffins as a yummy breakfast or snack idea.
I have always been a fan of muffins. Growing up, my mom would bake some in the mornings and I was able to grab a couple to eat on my way to school. I was usually running a bit late (I love to sleep!) so this was a good way for me to get something in my stomach in the mornings. As I got older, I began experimenting with making homemade muffins where I could decide what ingredients I wanted to put into the mix.
These muffins are loaded with protein thanks to the greek yogurt. They also use healthier substitutes for many of the traditional more fattening ingredients of traditional muffins. And, of course, fresh strawberries are a must. They are my absolute favorite fruit so I love to add them to recipes when I can.
I started with mixing the dry ingredients (flour, baking soda and salt) in a large mixing bowl. Next, I added maple syrup (a great sugar substitute), vanilla, coconut oil (better than butter!), eggs, yogurt and milk and mixed by hand until all the ingredients were blended. Lastly, I folded in the strawberries before spooning the batter into the muffin pan and baking for 20 minutes. When done, you have a fantastic healthy snack or breakfast.
