Hello divas! I hope that you have had an amazing week and are getting ready for the last weekend before Christmas. It’s been a little busy around here with work and trying to get everything done for the holidays. I am always looking for quick and easy healthy breakfast ideas to help me get a start on my day. And anyone who reads this blog (or follows me on social media), knows I have a serious sweet tooth (see how to stop sugar cravings). One of my favorite sweet treats has to be donuts. Like seriously. Dunkin Donuts is my favorite place to go for breakfast. So I thought I would share another easy healthy recipe today that combines the two – my skinny strawberry shortcake donut holes.
So for Christmas a couple of years ago, my mother got me a cake pop/donut hole maker. Which I have never used. I mean it has set in my cabinet for the last 2 years, still in the box. For this recipe, I decided to get it out and give it a try. There are other ways to make the donut holes, but this is a super easy one. This recipe turned out pretty well with the maker and my hubby just loves the donut holes.
For this recipe, I wanted to make a healthier version of the donut holes that you can buy from the donut shops. I substituted the all-purpose flour for the whole wheat version, used coconut oil instead of canola (gives them a better taste as well!) and a sugar substitute instead of regular sugar. The glaze is simply low-fat vanilla greek yogurt.
You start off by turning on the donut hole maker to warm it up. While it is heating up, you want to mix the flour, baking powder and salt. Then you will add the other ingredients minus the strawberries and blend until the batter is smooth. Fold in the strawberries and you are ready to cook the donut holes.
I filled each donut hole space just to the top. You will close the lid and cook for 6-8 minutes. My donut hold maker has a green light that will come on when done. From there, you take the hot donut hole and coat is with the greek yogurt. You can use cinnamon and sugar or any other kind of topping or glaze you like, but I loved the greek yogurt because of the nutritional value. After they are coated, set them aside to cool. Then you are good to go for a yummy, healthy snack or breakfast idea!
