Hello divas! I hope that you had a fabulous Christmas week and are ready to ring in 2015. I have some special posts coming up this week recapping my 2014 and setting my goals for 2015 so I hope that you stay tuned. To start the week, today I am sharing my top recipes of 2014.
This year I tried to focus on eating healthy and shared many healthy recipes here at Divas Run for Bling. Because I was trying to focus on adding veggies into my diet (something I lacked), most of these recipes were of the vegetarian (meatless) variety. So to celebrate another edition of Meatless Monday, I am sharing my top 5 vegetarian recipes of the year.
Crockpot Veggie Quinoa Chili. This is a fabulous recipe for this time of the year. It is loaded with veggies, super healthy because of the quinoa and oh so easy since you can make it in a crockpot. And it will keep you warm all season long.
Overnight Crockpot Pumpkin Oatmeal. I love the idea of a breakfast item that I can make the night before, making it super easy to have a healthy breakfast on those busy mornings. This recipe is loaded with nutritional goodness and tastes yummy.
Quinoa Burrito Bowl. Speaking of easy recipes, this one is among the easiest. You simply cook the veggies and beans while the quinoa is also cooking then combine in a bowl for a healthy meal.
Red Velvet Cool Whip Cookies. I couldn’t pick out all my favorite recipes without a healthier version of a dessert. Red velvet is my favorite type of cake and this uses the red velvet cake mix, one egg and sugar free cool whip, making this recipe easy and healthier than the conventional red velvet cake.
Blueberry Avocado Muffins. This recipe contains a baking trick I learned at Fitbloggin back in June – substituting avocado for butter. I fell in love with this particular recipe at the conference and came home to share it with all my lovely readers.
