Hello divas! I hope that your week has been fantastic and you are planning for a fun filled weekend ahead. Mine has been pretty good and the weather has been amazing. I love it now that it is getting warmer outside.
One of the things I love most about spring and summer is the fresh produce I can put into meals. I especially love salad recipes as they are easy to make and are not as heavy as some of the foods I eat in the winter. Add some summer produce and it’s a fantastic easy healthy recipe!
So I thought I would share another yummy easy healthy quinoa recipe that is perfect for the summer (and all your summer events) – my easy tuna caprese quinoa salad.
I am a big fan of quinoa if you haven’t figured that out by now. Whether it’s in a salad (see my asian quinoa salad), stir-fry (see my skinny chicken stir-fry) or any other yummy dish (see my quinoa pizza bites or my quinoa enchilada bake), it is a fabulous way to get protein and other important nutrients in my diet without always eating meat.
This quinoa salad is so easy to make as well. You start by cooking the quinoa. While it is cooking, be sure to chop up the tomatoes and mushrooms and mix the homemade balsamic vinaigrette. I also added a can of tuna to this recipe for some extra flavor and protein.
Once the quinoa is done, mix it with the tomatoes and mushrooms in a large bowl. Then you will add the tuna. Next comes the mozzarella (I opted for shredded but you can use chunks if you like) and the dressing and mix until evenly distributed.
This recipe is also customizable. I added tuna to mine. However, if you would like you can add another meat such as grilled chicken if you like. Or you can go vegetarian and not add meat at all! I also am not a huge fan of peppers (I get heartburn from time to time) but you can add them if you are. Either way you have a super easy and deliciously light salad perfect for summer.
