Hello divas! I hope that you have had a fabulous week and are winding down towards the holiday weekend ahead. My weekend looks to be pretty low key but I will be going to my first Major League Soccer game on the 4th so that’s exciting.
One thing I constantly struggle with is easy healthy recipes. You know the ones that don’t take a long time to make but still help you get all your protein and veggies in for the day? Yeah. I am always trying to find new and interesting ones to add to my repertoire.
One of my favorite meals is pizza. Hands down, I LOVE pizza. Almost all kinds of pizza. But we all know that pizza is not always healthy. So today I am sharing a healthier version of my favorite dish – my veggie hummus pita pizza.
The thing I love about this recipe is how easy and customizable it is. You start by taking your whole wheat pita bread (just the right size to give everyone their own pizza!) and baking it in the oven for 10 minutes. I put a little olive oil and italian spices on top of mine before I put them in the oven.
Once they have baked a bit, you take them out and add your ingredients.
I started with the hummus which is loaded with healthy goodness and a great option for those who want something different or something that is not red sauce. From there, you add all the veggies (and meat if you would like). For my pizzas, I added some diced onions, peppers, baby bella mushrooms and grape tomatoes.
I topped them with mozzarella cheese and put in the oven to bake for another 5 minutes (only enough time melt the cheese).
When they are done, you have a fabulously delicious healthy meal that will be a big hit for the whole family.
